You don't need to jailbreak your iPhone, all you need is Real Player. http://www.uk.real.com/dm/realplayer

Download Real Player. When on YouTube (or any internet video, if not properly copyrighted) you'll get a box at the top of the video saying "Download this Video?"

Click yes.

Then in Real Player convert to iPhone (it gives you this option).

It'll even open iTunes and put it in there for you in the Video section.

Then sync!
