Most people leave their iPhone open to theft without knowing it. Go to Settings, Face ID and Passcode, scroll down to Allow Access When Locked and turn off Control Center and USB Accessories. These two changes block the most common ways thieves access locked phones.

Turning off the control center stops the phone being able to be put in airplane mode by someone who has stolen the phone as long as the thief don’t know the passcode to the phone 

 

The best option is “find my device” and “Stolen Device Protection” being switched on which it normally is by default
