Basically, I believe I've figured out how to turn off/on the Assistive Touch on the iPod touch. If you are actually enabled on assistive touch and want to turn off, simply click the settings app and use THREE fingers to scroll down to General-Accessibility-Assistive Touch then simply enable on or off. I recently was a bit confused on how to scroll when assistive touch is enabled but then I realised that you have to use three fingers to scroll. I'm guessing this is the same with any other ios device but correct me if i'm wrong. Hope this helps!
