Many years ago I used to brew my own beer, and with practice added more hops and yeast.

After a break on some thirty years, I have just started again, from basics, using a pressurised barrel instead of bottles. ( A few of these used to explode, and caused a bit of a mess.

Is there anyone else who brews their own, and have they got any advice on how to make a top brew, with extra ingredients?

Definitely going to start doing this myself next year once money's sorted itself out a bit. I'm pretty passionate about good beer so feels like a pretty natural hobby to take up...

I would do if I had somewhere to do it. I do know, however, that Camra's quarterly BEER magazine has recipes and tips in it. Might be worth a look? This issue's got a feature on the history of American Pale Ales and how to brew three or four different ones at home.

Just organised to do a brewery tour tomorrow and to brew our own beer we get to choose from over 150 types of beers. We brew 50 litres worth and a few weeks later it will be ready to be bottled which we will do and then test the our own brews. Looking forward to it, except what sort of beer to brew.

I've been brewing with a few friends for about a year. We've brewed some good stuff, but have had a few disasters.

The first thing we tried was a simple IPA recipe, and that has generally turned out well. We then brewed a chocolate stout that turned out excellent, so we thought we were on a roll... even though we're scoring a lot more than we're missing, a a couple of recent brews (including a recent stab at a pilsner) have been ruined due to infected yeast. We're going to try using new brewing buckets in our next brew, plus use sodium metabisulphite to kill bad yeast.

We're working hard on pilsners now, because we're looking for something accessible to most beer drinkers that we can eventually brew in a large enough quantity to give to family and friends (we brew 5-gallon batches now). We've also made good lagers (classic American and light American styles) and made a decent Kölsch with a bit of a floral taste.

I'll paste notes jotted down by one of my co-brewers on a decent recent brew:

1.8 pounds sparkling amber

.1 pounds Munich

.4 lbs caramel

.2 lbs victory

Heated at 150 for 60 minutes stir every 10 than dump grain and water thru a strainer and pour 170 water 1 gallon clean through grain in strain and pour rest of water bring to a highe boil than add .1 ounce Columbus hops and bring to a rolling boil ever 15 minutes add cascade hops ( citra and northern brewer .25 ounce of each)

omitted--chill to 75 degrees F, pour into bucket and pitch+add pilsner yeast

We are keeping it simple; perhaps the only extra ingredients that we have used (not counting using combinations of hops) are Irish moss and caramel. If you're looking for ideas on brewing with extra ingredients, my country's Homebrewer-in-Chief has a few...

I brewed the beer on Friday, went for a golden ale. Was suprised it needed so much Glucose, whole process took over 2 hours and we will go back to bottle them in 3 weeks.

Was really fun went with 2 mates and just took the piss out of each other especcially one of my mates who was crap at the measurements. Also they had a keg set up and we were allowed to drink as much as we wanted, which we duly obliged and it was good stuff too. They had 158 reciepes we could of chosen from!

A housemate of mine once made some beer. He described it as the foulest thing he had ever tasted, and then proceeded to drink the lot.

Well there is no such thing as a bad beer, just some are better than others

Never tried it myself but I'm told the most important thing is to very carefully disinfect the vessel first. Rogue bacteria in the fermentation could be the cause of the shitty taste reported by others?

Even Fosters?

Fosters doesn't count as beer as it has less content than the average piss.

For the record i home brewed once and it was drinkable but i was pretty skint at the time having only been in my house a few months so it was that or nothing.

DT where did you do this brew sounds interesting.

Have my first ever fosters in London and i must say it was pretty good.

You're Australian so you can be forgiven for not knowing any better.

The beer in Aussie land must be bad.

Well for starters you could go in to a 100 pubs here and you would be lucky to find fosters in 1 of them, even then it will just be in a bottle that is probably bast it's use by date.

Our premimium beers are probabably amongst the best in the world but most people here tend to just drink standard beers.
