Here is a thread for everyone to share good practice in the kitchen or on behalf of a particularly tasty or unpleasant take-away you have pretended to cook. Last night I made Chilli & Salsa Chicken Pancakes. First time i'd ever made it, on the back of three quarters of a bottle of red wine, I was impressed. Pancakes are self explanatory to make. Hacked the chicken in to chunks and gently fried it until golden. Made the chilli salsa by chopping up some red & green chilli's, plus a few jalapenos I had knocking about. Threw in some chopped tomatoes, cooked spring onion and a bit of lemon zest and juice as I was in the zone. Heated it slightly, but not for too long. Just wanted it to be enhanced abit. Bunged it all in the pancakes with the chicken and some soured cream on the side to take the nip off the heat. Party in the mouth. I'm now very hungry.

Cheese you say? It has to be a mature cheddar doesn't it? I'd also recommend a sprinkling of mixed herbs in the beans as you heat them. Along with a touch of chilli powder it's quite delightful. Oh, and don't forget the brown sauce.

The Reverend Posted 17 April 2008 Posted 17 April 2008 The best quick meal in my 'repertoire', is tomato soup with chilli powder to give it a nice little kick, and cheese on that nutty brown bread toast. Its the absolute bollocks.

Durnerz Posted 17 April 2008 Posted 17 April 2008 I'm an avid cook and I love my italian food. I do a lovely Steak Pizzeola, Baked Ziti and Garlic Ciabatta, also the world famous Durnerz BBQ lasagne is a must try for anyone who comes round mine.
