'American Recordings' is just flat-out brilliant. But a huge amount of the credit for that and the albums that followed should go to Rick Rubin.

 

Sticking my neck out, but I prefer Willie Nelson. Never mind covers, the guys has written a ridiculous number of classics.

This will no doubt (ahem) be controversial, but I prefer this to the original. I think the song suits a female vocalist much better than it does a man.
