The Doctor Posted 18 October 2010 Posted 18 October 2010 meatball casserole didn't go quite to plan. The Meatballs fell apart and the carrots were too crunchy. Oh and i hate you jamie oliver with your 30 minute meals - cheating by using chapattis out of a packet - thats all i wanted a recipe for.

I managed to get bean juice in my eye, therefore leaving me with no option, other than to have a 'Rustlers' .

Did you part cook the carrots before chucking them in the casserole? I think you have to boil and simmer them first for 5 or 10 minutes or something like that first to take the crunch away.

From scratch, just take 1 celeriac, 1 parsnip, half a swede, 2 carrotts, an onion, some vine tomatoes and half a head of garlic, roast it off in the oven with some parsley and thyme after parboiling the carrotts and parsnips, cover for half an hour after roasting, then whizz it in a food processor with a jug of veg stock, then add in some milk, whizz again and add butter and seasoning, dee-lish!

No idea what to make her though any ideas? It has to be nice and it has to have meat in it but they are pretty much the only criteria.

The recipe is on the back of the mix packet that you buy in the shop and it's stupidly easy to make.
