If you want one that doesn't need a lot of watering you could try an African Violet, only downside is that they flower very occasionally. Good talking point though. if my wife was on this forum you'd get a very long list, she's the one with green fingers.

Just remember to turn it round every week or so to stop it growing off to one side towards the light, making it look all gone wrong
