But I do feel personally that a manager needs freedom, and that includes control over backroom staff. the thought of appointing a manager and dictating who is their number 2 just seems wrong to me if we want the manager to perform to his best, we need to surround him with the staff that he feels he works best with.

He has the confidence of the players and won the 2 games he was in charge. As Puel has worked with Plancque previously I can see Appleton getting sidelined. I don't see how 2 assistants can work, but what is certain, Appleton's influence/authority will be undermined. It cannot be good for the stability of the club and players - 2 assistants will have different views, styles of training. Appleton sees himself as a PL manager in the future - It seems likely to me he will consider his best option would be if he gets an offer to manage a Championship club. His previous record must make him attractive to a Championship club.
