If you're playing people with pace then defend a bit deeper - let them run at you and then time your tackle accordingly. As for the cut back, defend the player without the ball and force them to take the shot on. If they've got 2 players on 1 defender then a good player would score most times regardless of if they pass it or not. I've won a lot of games by defending like a demon for 85% and hitting on the break.

Just don't like BKs online who pace abuse on FIFA, use over rated teams or people who camp on games such as call of duty. I would rather be beat by someone who plays nice football, knows how to defend and creates shit load of chances or someone who runs around a map on COD killing for fun instead rather than hiding in a corner killing people they are the better gamers in my opinion so if I want to moan I will do.
