Ive got my take on this (patiserrie chef of 26 years btw.) Cakes like a victotria sponge or a lemon drizzle are extremely light so require less buttercream. But for your cakes like a carrot cake or coffee walnut we add extra buttercream in adding it to the sides and top of the cake also as they are a denser sponge. Hope this helps 👍

A lot of cakes have criminally low amount of filling these days. Like 2mm worth and then 2 inches of cake on top and bottom. It's fine if the cake isn't dry but when it is it's not very pleasant.

Interesting

Tbh I think my view is entirely based on moisture level. 

A lemon drizzle gets away with it due to the moisture that seeps in - but I made one from scratch with home grown lemons once and in the middle i put a layer of homemade lemon curd - it was even better. 

Moisture/mouthfeel for the win.

Blame the price of everything going up. And since Brexit we can no longer import the chocolate we used to get from Belgium. Cake = quick and cheap. But doing a proper buttercream with boiling sugar and water added into warm whisked up eggs then gradually adding the butter = long process and expensive.

A tip for you is to soak the sponge 30 mins or so before you start to construct it and make sure the syrup is boiling so it seeps through. Finish it off with lemon julienne that has been in your left over syrup then sprinkle with granulated sugar :thumbup:

Going back a few years but this is what i can make. Any tips on desserts id be more than happy help.

Watched the 2024 one with glasses. It wasn't so much about watching as it was the immersive experience. The temperatures plummeting, insects and other animals stopped making noise. For 3 minutes, it was dark in the middle of the day, and nature didn't know what to do.

 

But yes, my wife couldn't have been less interested. Either you're all in on it, or its dumb.

Yeah, I think people without the glasses should choose blinding themselves.

 

It's a bit of fun and a cheap way for many to get a feel of it, especially kids.

This eclipse event has been known about for some time. I'm surprised no supermarkets or other commercial enterprises haven't tried to monetise it in some way.
