Posted 23 December 2014 Posted 23 December 2014 Little touches / additions that take it to the next level Goose fat for the roast potatoes (check Nigella's recipe which also includes semolina, I often add garlic and rosemary as well) Maple syrup on the parsnips Red cabbage with apple and spices Use the turkey juices and all the other roasting shit for the gravy Yorkshire puddings essential - until I came down south I had no idea some people only had them with beef Homemade sausagemeat stuffing Chestnuts and bacon in with the sprouts First time for a few years I won't be cooking... like BS I'm with the in laws and nervous. Sister in law and mother in law both have checkered history in kitchen.

Merging Cultures Posted 23 December 2014 Posted 23 December 2014 This is the first Christmas for quite a few years that I'm not cooking. I might have to do some side dishes but nothing too heavy.

If it's beef of lamb get some of that fat into the mixture as well just before tinning it for an extra kick. The amount of people who whack up mixture 5 mins before they are cooking them and then moan about them being sick never fails to surprise. Get that veg in side dishes on the tables as well, no point wasting up valuable plate space with masses of green shit. Whoever said nut roast - bin!
