Hope so, but my mate does love my chilli beef nachos.Mate,sounds good yet again.You and MC always seem to be coming up with some good food.Your New Year stuff after the hard work looked stunning .Love cooking,but time always seems to be a factor.Used to do my own curries from scratch including garam masala but not so much these days.Had a fantastic Thai in Bath over the weekend including a papaya salad with a small kick,made a note and will see what I can produce .The Fish Curry was awesome.

Perhaps, just do a pan sauce. Do the reverse sear that was mentioned on here somewhere. Use the pan juices as the sauce. Reduce down with onions, garlic and some wine, and thicken with cornstarch to give it a nice shine. How will you present the dish? Roast potatoes are tricky to make them look sexy, and girls often think they are too fatty. Garlic can be tricky too, depends on how you are going to incorporate it. I'd puree the potatoes, dollop in a neat circle below the fillet. Roast the tomatoes with some balsamic until they are soft, cut in half and place neatly around the meat. I've been pan frying sugar snap peas, they add good texture and colour to a plate. Buy some 'microgreens' and place on top of the meat. It should look pretty good.
Unabomber Posted 28 May 2015 Posted 28 May 2015 The potatoes will be small cubes roasted with the tomatoes and garlic, the garlic won't be eaten. I don't think she is keen on mashed/purée. I was thinking a red wine reduction, I'm going to finish the steak in Rosemary butter. I'll go in to more detail later I have roofs to price atm.

One of the nicest sauces I have ever had with steak was lavender. I had it at my favourite French restaurant in London many years ago so I don't have a recipe. This video shows a blackberry and lavender sauce. It's being made with duck, but you get the idea. I like the look of the presentation and I know lavender is a nice herb to cook with for a change. I'm not sure how that would compliment the rosemary but it might be worth experimenting with lavender in lieu of rosemary in the butter if you don't fancy a cream sauce. Just an option, thought I'd mention it.

Don't get me wrong it sounds stunning, just not with steak. Would be perfect with a piece of cod, maybe some pickled Stilton
