Itsthejoeker Posted 30 May 2015 Posted 30 May 2015 This should serve four (with enough for left overs) 1.5kg of good quality braising steak, best you can afford 2 large onions, chopped, not finely. Butter 4 bay leaves Few sprigs of thyme 3 cloves 1 large bottle of dark beer (leffe is perfect) 4 slices of brown bread no crusts Mustard (Belgian or French) White vinegar Pancake syrup Sweat the onions in a big pan with a knob of butter. Don't let them brown. Fry the steak in batches in a separate pan with butter, season as they fry. Tip them onto a plate. Then tip into the onions and stir around. Keep the frying pan on a medium heat and pour in the beer till it boils then pour it into the pan with onions and steak. Add salt and pepper to the pan along with herbs, cloves and a tablespoon or two of syrup. Spread a thick layer of mustard on the bread and place it mustard down in the pan. Put the lid on and cook on a really low heat for three hour, stirring occasionally so it doesn't stick to the pan. Can be done in the oven too. Take the lid off and reduce until it's thick. Don't worry if the meat falls to pieces in the sauce. Serve with Belgian chips and mayonnaise. Drink la chouffe.

The problem was the pastry cracked during cooking meaning I couldn't put the jelly in it without it leaking out so I wrapped it in clingfilm and wound a load of sellotape around it before I poured it in. It actually worked quite well.

I started off with the BBC recipe until I realised it wasn't watercrust pastry, so the filling was BBC but the pastry was from something I googled, I can't remember which.
