Iron Monkey, Hero, House of the Flying Daggers, Drunken Master, Once Upon A Time In China, Ong-Bak - not strictly Kung Fu, but great films. Can't go wrong with early Jackie Chan either.

 

Or do you mean Kung Foo as in the cheesey over-dubbed types?

Also: Not technically Kung Fu, but Ip Man's a great shout, as is that Jet Li one about the Wushu master. (Was it called Fearless? I'm not sure.)

If you want to go the Japanese route, Sonny Chiba films are good, especially the Street Fighter series.
