Interesting point, but ultimately it's very difficult to put aside personal preference - however I think the "lynch-pin" albums, the revolutionary ones, are kinda obvious... Sgt Peppers, Dark Side of the Moon, Dare, Nevermind... to name a few. As for favourite, well that is the same as my answer to favourite single - it changes depending on mood, there are far too many good albums to just have one - but the usual suspects are... All of which goes to show, just can pick ONE! Favourites are favourites and I could write a fair old list. Though I believe a truly great album is uncompromising. Very few artists deliver an album with ten to thirteen tracks that potentially all of them could be released. They save the great tracks as they see them and spread them over a few albums. This means that works of genius are rare, most albums have four or five tracks you want in your collection, hence itunes success at 74p a track. (or whatever it is at the moment) There are a few hundred classic artists like Bowie, Beatles, Dylan, Metallica, The Stone Roses....(I could go on all day) that have produced iconic, powerful music over sometimes a sustained period, even decades, though very few with an album of ten plus solid tracks. I think I've grown in and out of this album several times. Love them/him or hate them it really does stand out for me. Foxes talk members, on the above criteria, I suggest, Nivarna - Nevermind. And to be honest I disagree that bands "save up" their great tracks and spread them over a few albums. Some might I suppose. A truly great album is one that could be considered a musical journey with each track telling a different story and complimenting each other perfectly. A truly great album may have tracks that could be considered weak compared to others by the same band. However it's their place in the album and the way they "fit" with the other songs that makes the difference. Dark Side of the Moon is probably the greatest ever example of a musical journey. Some may say there isn't a weak track but Pink Floyd weren't thinking about what songs could be released when they wrote it. That album listens more like one epic song as opposed to a set of individual tracks and that's why it is rightly considered such a classic.
