Apologies if this is already a thing, I couldn't see one.

 

What are you cooking and what are your favourite foods?

 

I love cooking. I work long hours and making something in the kitchen is a bit of an escape for me.

 

Put some music on, have a couple of beers...

 

I'll give most things a go. Love a Sunday roast, curries from scratch, experimenting with burgers.

 

Really, really want to make a Beef Wellington, but worried I'll cock it up after spending 30 quid on a fillet of beef!

Made a roast jerk chicken today. Was one of the best things I’ve made. The potatoes were amazing, below is what I did.

 

Get a medium chicken to roast. In a bowl mix 4 tsp jerk seasoning 1 tsp chilli flakes 2 table spoons olive oil and 3 crushed garlic cloves and 5 sprigs fresh thyme. Cover the chicken in that mix. And cover and leave over night. When ready to cook cover in salt and lemon juice. Put the lemon and some garlic cloves up the chicken cavity. Put in a roasting tray with peeled cut potato’s. Roast for 1 hour 20, then remove the chicken to rest. Leave the potatoes in the oven. Then after 15 mins all good

I did two Beef Wellingtons for Xmas - it really is a lowish effort/big impact dish. Pretty much the only way you can cock it up is to over cook it
 

I think I started with the Gordon Ramsay recipe initially - so that might be a good place to look. 
 

Also, ask the butcher for the thick end of the fillet, not the scrawny end 👍

The worst thing about being a grown up is the responsibility to decide what to eat every night without keeping doing the same things!

I'm absolutely addicted to poached eggs with hot sauce on toast. I normally go for either a sriracha or caribbean-style one with habaneros and scotch bonnets, but I'm seriously thinking about just trying all sorts of different types of eggs and different hot sauces to find out which combinations are the best.

Have you tried the Encona Hot Pepper sauce? That’s a belter, and very warm too.

That stuff is superb. Took ages to find the right amount to use in dishes as it gets too hot very quickly.

Yeah it does. That really acidic, tangy heat as well - It’s a proper hot sauce, miles better than Tabasco.

we are doing a similar thing but with mindful chef. 

 

We've gone down a vegan/vegetarian route for the meal choices, which for us is 5 nights per week.

 

The calories per meal are between 500 and 600 and the food is fantastic with nice variety and some new ingredients to boot (who knew banana blossom was a thing!) 

 

it's not "cheap" it costs us £55 per week.... but we'd fallen into a trap of ordering at least 2 takeaways per week, which was probably costing us more than the above.

Same - I think £80 is steep but you will never overcook meat again...I've got a digital thermometer but thats about how far it goes at the min
