I've gone purely for the entertainment factor and assuming there wouldn't be relegation so certain clubs could get up to speed over time. I've gone for big clubs and clubs with potential and made sure that every club has at least one big local derby.

I found it funny that it says you can choose any team from the 4 leagues and yet it let me add in Notts County

I'm not having that. That would basically turn the Premier League into the SPL with us being Celtic. It would lose all value and just be completely pointless.
